Creamy Alfredo Argentina pink shrimp portabello mushroom pasta

It is amazing how knowledge of how to cook basics can be empowering. Sometimes, I go to a restaurant and crave the most expensive item on the menu but in my heart I know that with the right ingredients, I would not have to pay as much.

Ingredients:

heavy cream
shrimp
Pasta noodle
Portabella mushrooms
Olive oil
Salt for taste
Pepper
Shredded parmesean

Basically I start off by cooking the shrimp and setting it aside and then the mushrooms. Season to taste. While I do that I boil water and follow instructions to cooking the noodles on the box. After cooking the mushrooms, I boil a little mirin for flavoring until the alcohol is completely gone and the n add the heavy cream and continually stir till it thicken. In the thick alfredo sauce, I add salt and pepper and then add the noodles. Then, I add the shrimp and mushrooms. The mushrooms picture has peas but I preferred the batch that did not have peas.  Below is the final product.

YouTube

I filmed a few DIY videos for YouTubs. What made me do it? Well, I wanted to try it for fun and one time I was at home with my baby and wanted to do something for me to share with the world. 

I am not a big star nor do I want to be one. But, I find it amazing how a DIY video that interest people can get so many views. In 2 year, my "how to make a cute ribbon wand" got almost 9,000 plus views, 29 likes & 22 dislikes. Sure I'm not a fan of the dislikes but reality proves that not everyone will like you and that's fine with me as long as there are those special that you love and love you in return. 

My other videos did not get that many views but one that is inching up to 10,000 is in itself shocking. Have a great day!


 

Mommy Mermaid


Mermaids in movies are beautiful with long flowing hair, slender bodies & beautiful voices. I never thought an experience was achievable till I came across a Pinterest picture of people who have jobs swimming in tanks and pools as Mermaids. I pinned the pictures hoping one day I would somehow be able to wear my own fin. 

I completely forgot about the pin but one day stumbled upon a website finfunmermaid.com offering affordable fins for aspiring mermaids...heheh. Yes, it was a spur of the moment decision that I decided to make a purchase since it had great reviews.

I tried the fin at home and to me it was a pleasant surprise because I had the tail of a mermaid! Now, it was my turn to find a pool to try it in. We were staying at a hotel for our friends wedding and behold there was a wonderful pool. Yes, I brought out my fin to have some fun. It was a blast to say I was momentarily a mermaid, no doubt it was a head turner and an amazing experience.  Thanks to my husband for holding our baby through my shenanigans. 

Ultimately, I feel that no matter how small or big your goal are, how silly others may find it, go after what drives you because it makes you feel alive and inspires you to go for more out of life. Below are 2 snap shots of me as a Mommy Mermaid. Hehe๐ŸŽ‰

I am a Mom:)

I am a Mom now. Sometimes it is unreal because I still feel amazed every time I see my son and his handsome smiling face. I try my best to make sure he is happy whether it be ensuring that he is not hungry, has enough rest, play time and making sure he is cleaned and smells wonderful. 

At the same time, I want to make sure I do not forget who I am as a woman. I still make an effort to do what I did before whether it be exercising, learning the ukulele and trying to achieve newfound goals.

It is hard to balance life as a full time homemaker and finding time for myself but I make sure that I do little things here and there by including my son in the process. I put my treadmill outside to get fresh air and when I exercise on the treadmill I put my son in his bouncer toy so that he can work on his leg muscles. As a part of play time, I play ukulele to enrich his mind with the arts. Another thing I did was spend time with my neighbors who always invite us over so I can have adult conversations. Heheh.

Overall, my journey as a new Mom has just begun. I  am trying to embrace every moment and trying my best to help my son learn acts of independence so that he can be a brave little guy.  All we can do is try our best to be the best Moms/Dads/Guardians to our little ones.

Hair Loss Post Birth

I am a pretty low maintenance type of gal. I do not wear too much makeup and I have only dyed my hair once. So, I was surprised that after giving birth to my son that I suffered from hair loss near the temples of my head.

I did not even notice my hair loss till I looked at a picture 4 months post labor and I saw the bald spots. Oh my, I mentioned it to my husband and as a kind man he said that he noticed it but did not want to worry me. I also realized at that time that there was so much hair on the floor.๐Ÿ˜” I was sad but told myself if  this is what I have to suffer to have my son, I will do it again because he is everything to me.

What was I to do? I read online that the stresses of labor could cause hair loss, so I decided to accept that maybe it comes with the territory. I have a baby now and because of the toll it took on my body that I loss some hair. As to avoid further loss, I decided to brush my hair with more care and not shower with hot water...as recommended by some blogs online.

I told myself to not think too much of it and just let it be. To my surprise, two months later baby hairs were growing from the two bald spots near my hairline.  I am very happy and am grateful that I have both my son and my hair growing back. 

As a new mother, I appreciate all the parents/guardians who sacrifice for their child(ren) because it is a lot of work but well worth it.

Baby Led Weaning


Thank you to my sister, Natasha, for introducing me to the book and concept of Baby Led Weaning. Baby led weaning is the method of how a baby will transition from drinking milk (breast or bottle feeding) to eating solid foods. The concept of the book is that a baby does not need infant cereal or mush to learn to eat. Instead, the baby plays and experiments with appropriate sized foods and eventually over time will learn by tasting and example of parents/guardians how to eat. There's more to the book and the details are important to starting for the safety and health of the baby.

I was inspired to attempt at teaching my son, Axel, how to eat and so far it has worked. Here are pictures of my son sucking on broccoli and apples.

DIY Lampshade


I have always loved arts and crafts.  I wanted a decorative light fixture for my husbands and my bedroom and came up with this beauty.
